°150g flour
°½ tsp salt
°60g icing sugar
°100g butter
°3 eggs
°150 to 200 g of sugar
°3 lemons
°2 tbsp. corn-starch
+icing-sugar
* Methods
Sifting 150 g flour + ½ tsp salt + 60 g icing sugar
Blending or mix with your fingers with 100 g cold butter cut to cubes also spreading in bottom of mold lined with baking paper, pack well, & reserving 30 min in fridge
Baking at 180°C for 20 mins
Preparing lemon mix: whisk 3 eggs + 150 to 200 g sugar + zest lemon and juice of 3 lemon (i.e. 150 ml) + 2 tbsp. tablespoons of cornstarch (to be diluted in lemon juice for example) and thicken the mixture for 5 minutes over medium heat, mixing well
Pour on shortbread base, baking for 10-15 mn
Leave to cool totally (fridge), then sprinkling with icing sugar
